One large eggplant, sliced.
2 or 3 tablespoons margarine
2 eggs
1/3 cup milk
Cracker or bread crumbs
One tablespoon Italian seasoning
One tablespoon garlic powder
Salt and pepper to taste
Slice eggplant into about ½ inch slices, add salt and pepper. Mix eggs and milk in small bowl. Combine cracker or bread crumbs, garlic powder, Italian seasoning in ziplock bag and mix well. Dip sliced eggplant in egg/milk mixture, then into the bag with the breading, and shake well. Heat margarine in skillet and add breaded eggplant when the margarine is melted. Cook on medium to high heat until golden brown and serve.
